Flake ice, also referred to as scale ice, are flat, thin pieces of ice (1,8 – 2,2 mm). They are formed on the inner surface of the drum by pouring a film of water over it, upon touching the drum, the water freezes into a sheet of ice.

A flake ice machine works by freezing water inside a metal cylinder and allowing the frozen liquid to flow through the coils. The refrigerant freezes and the water then flows through the cylinder, where it builds up a column of ice. This is then expelled from the evaporator and into a reservoir.
